Thin Mint Brownie Truffles

If you're all for tearing open a box of Thin Mint Cookies, this is for you! Thin Mint Brownie Truffles are perfect for any party!

We're not sure about you guys, but we're big fans of all Girl Scouts cookies but specifically Thin Mints. They're perfectly sweet and chocolately and help us curb that nasty sweet tooth that we have!

If you're anything like us, this recipe is for you! With a few simple changes, you can go from the classic cookie to a show-stopping dessert bite that's perfect for sharing with friends or bringing to any party. These festive truffles are perfect for bringing to a potluck, family dinner, birthday party, or holiday party. I mean, what else could you want!

Thin Mint Brownie Truffles, makes 12 truffles


  • 1/2 cup oat flour 
  • 7 dates
  • 2 tbsp of cocoa
  • 1/4 cup brownie spread
  • 1/4 cup almond or cashew butter
  • 1/4 tsp mint extract 
  • Salt
  • 1/2 tablespoon of plant milk
  • 1/3-1/2 cup of chocolate chips, melted (for dipping the truffles in)



1. Add everything, except the plant milk and melted chocolate chips, in a blender.

2. Blend until combined. Scrape down sides and blend more.

3. Add the plant milk and continue to blend until it turns to a crumbly but sticky dough.

4. Roll into balls.

5. Stick in the freezer for 20-30 minutes.

6. Melt the chocolate and dip each truffle in the melted chocolate.

7. Add some flaky sea salt on top! Store in the fridge (or freezer indefinitely).
