Coconut Caramel Pecan Pie Bars

Pecan pie bars are the perfect bite-sized treats for your large holiday gatherings!

We. Love. Pecan. Pie. It's a holiday tradition in our families, and we hope to make it a holiday tradition in yours! Our version is also REFINED SUGAR FREE! You heard that right. Pecan pie without the processed sugar. You and your family will get all the sweet goodness without the unnecessary refined sugars.

Our recipe adds a large gathering friendly twist by turning our favorite dessert into bite sized bars. You can cut into large squares, or you can cut into small, one-bite squares for larger parties!

So gather your friends and family, take a bite, and enjoy!

Coconut Caramel Pecan Pie Bars

(Makes one 8x8 tray)

Ingredients

CRUST:

·     1 cup oat flour (can finely grind up whole oats)

·     1 cup pecans

·     2 tbsp maple syrup

·     2 tbsp Kokada Classic

·     3 tbsp coconut oil (melted)

·     Pinch of salt

FILLING

·     ¼ cup coconut sugar (can use regular sugar)

·     ¼ cup maple syrup

·     ½ cup Kokada Classic

·     2 tbsp almond or other plant based milk

·     1 tbsp arrowroot (can sub cornstarch)

·     1 ½  cups pecans

·     2 tsp vanilla extract

·     Pinch of salt

 

Method:

1.    Preheat the oven to 350.

2.    Pulse the dry crust ingredients (oat flour, pecans, salt) together in a food processor until the pecans are finely chopped.

3.    Add in the maple syrup and Kokada and blend.

4.    Add the melted coconut oil and blend until well combined. The texture will be crumbly but it will stick together when pressed!

5.    Press the crust into an 8x8 parchment paper-lined baking dish. You can use the back of a spatula to smooth it out.

6.    Now start on the filling. Mix together all the ingredients using a whisk.

7.    Pour over the crust.

8.    Bake for 30 mins.

9.    Let it cool on the counter for 1-2 hours. Then place it in the fridge for an hour to set. You can eat it before the fridge but it may be harder to cut and messier to eat!

10.  Pull it out of the pan using the sides of the parchment. Cut into squares and enjoy!Leftovers can be stored in the fridge.
